Avocado, Cheese and Cannabis Omelette: With Spuds

I was donated some pot from a kind person who somehow knew I used it. Cooking grass has never done much for my mind, arthritis or taste buds but that could be my cooking.

This stuff was too dry to smoke and too weak to vape so here’s a California style cheese and avocado omelette with California avocado, garlic and cannabis, and New Zealand grass-fed cheddar cheese.

Prep Time: 1 hour

Cook Time: 1/2 hour

Serves: Me

Ingredients
2 Brown free-range eggs (or just eggs works too)
1/3 Onion, chopped
1/3 Avocado, chopped
1/4 Cup organic cremini mushrooms, chopped
Cheddar cheese, chopped
1/8 Cup heavy cream
1/8 Cup water
2 Cloves garlic, minced
2-4 Tablespoons bacon fat with butter
Pot, sifted
Salt, pepper to taste

Side Dish
2 Medium white potatoes

Directions
Whisk eggs with cream and water, salt and pepper to taste, set aside.

Sauté onions and mushrooms in saucepan with bacon fat and butter for 4 minutes; add garlic and cannabis, stirring frequently for 2 more minutes. Put in with whisked eggs while you deal with potatoes.

Simultaneous heat another saucepan with oil or fats-I used olive oil this time-at medium heat, and sauté your spuds until the right color, flipping and moving them at random so you feel useful-that’s what I do.

I microwaved these white potatoes last night for about 3 minutes so they didn’t take long.

Clean your saucepan and grease it up again. Whisk and then pour the egg mix into the heated pan and cook on medium heat.

Add the cheese and avocado in a random pattern. I use the spatula to lift it all around (UK:round), allowing the eggs to flow to the edges.

I’m too chicken to try flipping it like Bobby Flay would, so I fold it in half and turn down the heat. When cooked to the firmness and color you like (this one a shade dark due to the time it took to take pics), serve with the potatoes. It doesn’t take very long.

To get it out of the pan intact I loosen it with my beloved old spatula, invert the dinner plate over the pan, then quickly invert the whole mess while holding the plate to the pan. Done correctly it often works a charm; done terribly wrong then eggs on the floor. “I’ll take this mess back to the kitchen and bring out the OTHER omelette.”

This turned out pretty tasty considering, just a whiff of Mephitis mephitis. Would have been great with some thick yogurt. Nutritious, but so far not psychotropic. And it’s mostly organic and paleo too except for the dairy and white potatoes, which I just love.
